Seriously, HOW MANY MORE blogs about RAIN can I write? I think I'm having post traumatic rain syndrome. How many more pictures can I show of our street being flooded. OK class, now we ALL know our street FLOODS. Aren't WE special or specialer as Snow and I like to say. From now on there will be NO MORE pictures! But...before I go....today was EPIC... the water line was at our door. I stuck my foot out the door and it covered my toes! We were so close and yet SO FAR from the water coming in and getting ALL new "stuff". In all, we got 13 inches of rain. Which would equal 13 feet of snow.

So, at 4am Baby Bear was in the kitchen cooking breakfast-eggs and sausage. At 6am the school district cancelled school. It became the PERFECT morning for sleeping- it was dark, rainy, no where to be...the street was under water.... So Baby Bear took to baking! I've been making this recipe since 1991. It's from a cookbook that Papa Bear's family put together for a family reunion.
Banana Nut Muffins
1 1/2 cup flour 1 tsp. soda 1/2 tsp. salt 1 large bananas 1/2 cup sour cream 1 cup sugar 2 eggs 1 tsp. vanilla 1/2 cup margarine or butter 1/2 chopped nuts
Combine dry ingredients. Mash bananas, add butter and sugar. Cream together. Add eggs vanilla and sour cream. Mix well. Add dry ingredients and fold in nuts. Bake 375 for approx. 15min. I always say until you can "smell" them.

Yesterday we gave a wedding shower for a friend who's daughter is getting married. This is what I made: my favorite-everyone-loves-it-SUPER-easy-anytime-a-year-appetizer:
Aka: Cranberry, Crab Meat and Cream Cheese Appetizers
1/2 cup whole cranberry sauce 1/3 cup cream cheese 1/4 cup minced crab meat 2 tablespoons green onion 15 individual mini-fillo shells, thawed Cook shells according to package directions. Place cranberry sauce in a small mixing bowl; beat with whisk or fork until smooth. Combine cream cheese, crab meat and green onion in a small mixing bowl. Fill each shell with about 1 teaspoon of the cream cheese mixture. Top with 1/2 teaspoon cranberry sauce.
And wa-la you have the most delicious-super-easy- appetizers!

At a church Retreat called "Break Thru" with music led by this guy:
At 4:30pm on schedule, 3 cars loaded with 20 plus kids left for camp without Papa Bear. He didn't make it home until 1am! Short story: He was to be on a 3:30pm flight "to make sure and get home on time" he changed it to 11:45am. The rain kept comin', the flight kept getting pushed back until finally at 6:30pm it was cancelled. He rented a car and drove home. That 3:30 flight he was originally on-it left at 6pm! He's not bitter.
So, Saturday morning he drove to the camp.

Baby Bear was a "10-ager", a cub scout and would still wear his hair "our way".
Teen Bear was a "tween". This is him at Exchange City, a program thru Junior Achievement. The whole 5Th grade got to spent a day "running" a city. He was the "Sign Shop" owner.

Serengeti Dreams- Commonly know as "Spaghetti Dreams"
1 pork tenderloin (about 1 pound) 1 egg 1 tbs. water 1/2 tsp. dried rosemary, crushed 1/4 tsp. pepper 1/2 tsp. garlic powder 1 cup panko bread crumbs 3 tbs. canola oil 1 pound fresh mushrooms, sliced 2 tbs. butter 1 can cream of chicken soup 1 cup sour cream 1/4 cup chicken broth
Cut the tenderloin into about six to eight pieces. Use a meat tenderizer to flatten pieces to about 3/4 inch thickness.
Combine egg, water, rosemary, pepper, and garlic powder in a small bowl. Place the bread crumbs in a separate bowl. Dip the pork into egg mixture, then into bread crumbs.
In a large skillet over medium heat, brown pork in oil for about 5 minutes on each side. Remove pork medallions to a 13 x 9 pan. In the same skillet, saute mushrooms in butter until tender.
Add in a cup of sour cream then 1/4 cup chicken broth. Cover the dish with foil and bake in a 325 degree oven for one hour.
