A Rainy Day and A Banana Nut Muffin Recipe

Seriously, HOW MANY MORE blogs about RAIN can I write? I think I'm having post traumatic rain syndrome. How many more pictures can I show of our street being flooded. OK class, now we ALL know our street FLOODS. Aren't WE special or specialer as Snow and I like to say. From now on there will be NO MORE pictures! But...before I go....today was EPIC... the water line was at our door. I stuck my foot out the door and it covered my toes! We were so close and yet SO FAR from the water coming in and getting ALL new "stuff". In all, we got 13 inches of rain. Which would equal 13 feet of snow.

So, at 4am Baby Bear was in the kitchen cooking breakfast-eggs and sausage. At 6am the school district cancelled school. It became the PERFECT morning for sleeping- it was dark, rainy, no where to be...the street was under water.... So Baby Bear took to baking! I've been making this recipe since 1991. It's from a cookbook that Papa Bear's family put together for a family reunion.

Banana Nut Muffins

1 1/2 cup flour
1 tsp. soda
1/2 tsp. salt
1 large bananas
1/2 cup sour cream
1 cup sugar
2 eggs
1 tsp. vanilla
1/2 cup margarine or butter
1/2 chopped nuts

Combine dry ingredients. Mash bananas, add butter and sugar. Cream together. Add eggs vanilla and sour cream. Mix well. Add dry ingredients and fold in nuts. Bake 375 for approx. 15min. I always say until you can "smell" them.
